Peach Melba on Almond Biscuit

I imagine the original Peach Melba contained something along the lines of poached peaches, vanilla ice cream and raspberry puree, with sugared nuts sprinkled over. My version uses ripe peaches, home – made garden mint ice cream, sugared nuts (bet you can’t stop nibbling these!) and an almond biscuit, with lots of raspberry puree to complete the picture.

Coffee Meringue with Cream and Summer Fruits

We once served this for Delia’s birthday dinner and she came back for a third helping – say no more! Everyone loves meringue and this recipe is particularly good: soft-centred, almost like a pavlova, with a crisp top. It will keep, but is best eaten on the day it is made.

Baked Vanilla Cheesecake with Poached Blueberries and Crème Fraiche

This has to be one of my favourite puddings. The filling is best mixed by hand; if you use a mixer or whisk you will incorporate too much air and spoil the texture of the cheesecake. When you take it off the oven after 1 hour, it may still look very wobbly, but trust me, it will set. If you are really worried, stick a knife into it. If the knife comes out hot, it’s time to take it out of the oven.
